A full-bodied wine with cloves, cracked black pepper and spicy aromas, layered with intense black berry fruit flavours. A rich palate with firm tannins, backed by well-integrated oak. A serious Shiraz. Enjoy with food dishes such as roast beef, duck and venison. VINTAGE: A normal winter with good rain and enough cold temperatures gave our vineyards a well deserved rest. During spring we reduced the impact of the wind on our vineyard leaf canopies by better spacing and management of our trellis wires. The wind did however have an impact during the flowering period and our yield was reduced to 4.5 tons per hectare. The heavy rains on 10 February (57 mm) broke the summer heat and the cool, late summer extended the ripening of our Shiraz grapes. All the grapes were hand picked from 21 February to 6 March at full ripeness of 25°B. AGE OF VINES: 5 - 6 years VINIFICATION: After destalking and minimal crushing of berries they were left to cold soak for 48 hours. Fermentation with selected Rhoné yeast strains. Temperature controlled at 22-26°C. Pump-overs effected thrice daily. Barrel matured for 18 months in 100% French oak, special barrel selection.
