This medium- to full bodied Merlot offers lovely ripe black-berry flavours and a dash of mintyness, complemented by the complexity of oak from maturation in top quality French oak barrels. Barrels are carefully selected to enrich tannins to a structured mild character with deep tones of wood in the rich fruit, resulting in a classic combination to accompany and complement meat dishes with sophistication. Vineyard practices have paid special attention to producing smaller but fruitier grapes with a richer structure. Vinification Details: Only healthy optimum ripened grapes are used, harvested early morning, to ensure the flavours are intact. The juice and skins are then pumped into a cooled stainless steel tank, to ensure all flavours of the grape are kept as well as the natural structure is intact. The grapes then undergo fermentation with specially selected yeast for 4 weeks at 20ºC. The grapes are then carefully pressed and then put into the barrels, they are the racked 4 times before bottling. |
